Instead, its active compound, hydroxy-alpha-sanshool, triggers a gentle tingling and numbing sensation on the lips and tongue. In Chinese cuisine this effect is called mala — the numbing heat. In a tea context it manifests as a warm, buzzing sensation that arrives after the initial flavour and lingers pleasantly. Combined with the oolong's natural sweetness, the effect is invigorating rather than aggressive, and distinctly memorable.
