About Blue Matcha

Blue Matcha is not a traditional tea — it is butterfly pea flower (Clitoria ternatea), dried and ground into a fine powder using the same stone-milling process as matcha. The result is a vivid indigo-blue powder with a mild, earthy flavour, a calming effect, and a remarkable pH-sensitive colour change that turns the drink purple when acidic ingredients are introduced. It is one of the most visually distinctive products on any cafe menu.

The Science of the Colour Change

The blue colour comes from anthocyanins — the same class of pigments found in blueberries, red cabbage and purple sweet potato. Anthocyanins are pH-sensitive: in a neutral or alkaline environment they appear blue; when an acid is introduced — citrus juice, hibiscus, a splash of lemon — the pH drops and the colour shifts to purple or pink.
