Zhejiang province has been the centre of Chinese green tea production for over a thousand years. The combination of mineral-rich volcanic soil, high humidity and cool mountain temperatures creates ideal conditions for shade-grown matcha cultivation. China's tea industry has invested heavily in advanced processing technology in recent decades, producing ceremonial grade matcha that rivals — and in blind tastings, often outperforms — its Japanese counterpart, at significantly lower cost to hospitality businesses.
Before harvest, the tea plants are shaded for 20–25 days. This slows photosynthesis, forcing the leaves to produce more chlorophyll and L-theanine — the compounds responsible for matcha's vivid green colour and characteristic umami depth. The young tencha leaves are harvested by hand in spring, steamed immediately to halt oxidation, then dried and de-stemmed before being slow-ground on granite stone mills. The result is a fine, smooth powder with no chalkiness and a clean finish.
