The core difference is the leaf selection and grinding process. Culinary grade uses leaves harvested later in the season, which carry a more robust, slightly more astringent character. This assertiveness is actually an advantage in baking, blending and mixed drinks, where the matcha needs to cut through butter, cream, sugar or other strong flavours without disappearing. In a straight latte it would taste sharper than ceremonial grade; in a matcha cake, cookie or smoothie, that boldness is exactly what you want.
